What to do with a delivery of the loveliest haul of mixed apples and walnuts on the little red bench, but fire the oven's engines and whip up a batch of Autumnal apple bread?
The heavy, old nut crackers pictured here belonged to my great grandmother. I like to think of all the generations of my family who have had their hands on this solid, enduring utensil over the past century or so.
I tend to make up my apple bread recipes as I go along, depending on the fruit. This week I used:
3 cups of all purpose flour
1 tsp baking soda
1 tsp salt
1 cup chopped walnuts
3 cups, peeled, cored, chopped apples
1 cup vegetable oil
1 cup brown sugar
1 cup white sugar
3 eggs
2 tsp cinnamon
1 tsp vanilla
- First, I preheated the oven to 300 degrees F (150 degrees C). Then I greased and lined 2 loaf pans.
- I mixed the flour, baking soda, salt, applesand walnuts in a big bowl. Next, I whisked sugar, eggs, oil, vanilla and cinnamon in another bowl before mixing it all together and evenly dividing between the two loaf pans.
- I baked the loaves for one and a half hours.
Perfect for back to school lunches.
