Plaza Bistro bar manager Trevor Bach of Sonoma made Timo (pictured above) a mean Manhattan during a recent visit to our favorite neighboring wine country town.
We were intrigued — and upon further investigation, learned from Trevor that he does, in fact, have this handy video to share demonstrating just how to replicate his crafty, wood-fired cocktail.
Trevor uses rye whiskey, Antica sweet vermouth, brandy cherry juice and orange bitters. He carefully smokes a wine stave with a torch and places the glass over it to season & warm. After torching an orange zest, he garnishes his signature Manhattan with zest and a brandied cherry.
