Seeing as we're still experiencing chilly weather here in Southern Sonoma County this early March, comfort foods are very much in vogue. I'm a little bit over the stews and meat-heavy casseroles of winter. A good grilled cheese is never out of fashion! Thanks to our friends at Bellwether Farms, local Carmody cheese is about as good as it gets in this department. Follow Bellwether Farms on Facebook, Instagram and Pinterest for more recipe ideas.

Carmody Grilled Cheese Makes 4 8 1/4-inch-thick slices sourdough bread 2 tablespoons butter, room temperature 6 ounces Bellwether Farms Carmody, coarsely grated Butter one side of each bread slice. Place 4 slices of bread, buttered side down, on your work surface. Distribute the Carmody cheese over the bread slices. Place remaining bread, buttered side up, on top of the cheese. Heat a large nonstick pan over medium-high heat for 2 minutes. Put the sandwiches into the pan, cover, and cook for 2 minutes. Remove the cover and turn the sandwiches, pressing each one firmly with a spatula to flatten slightly. Cook for 1 minute or until underside is golden brown. Turn the sandwiches once more, press with the spatula again, cook for 30 seconds, and remove from the pan. Cut in half and serve immediately. |
