The dynamic duo from Sebastopol's Zazu Kitchen + Farm Duskie Estes and John Stewart, plus David Budworth of Marina Meats are all set to “Celebrate the Pig” from 6:30 to 9 p.m. Thursday, June 25, at a Fresh Starts Chef Event in the series I've been writing about this year at Homeward Bound of Marin.
These innovative fundraisers are a cooking class with celebrity chefs in which you actually get to sit down and eat the dinner they're demonstrating.
Chefs will demonstrate a three-course menu as the butcher/educator, known simply as “Dave the Butcher” to his fans, breaks down a pig from Biagio Artisan Meats in a fascinating presentation alongside the cooking. Their menu:

Along with co-leading the staff at Zazu, Chef Duskie has competed twice on the Food Network's "The Next Iron Chef" and appeared with John and Chef Emeril Lagasse on the show, "Emeril Green."
The pair produces salumi from their own Black Pig Meat Co. and operate Zazu on the River, an outpost at Davis Family Vineyards in Healdsburg, as well as making their own wines that are available at the restaurant or online.
Duskie, who recalls cooking since the age of 5 in her E-Z Bake Oven, and John, who grew up in the kitchen of his family's four-generation catering company in New York, began their partnership with Zazu restaurant + farm in Santa Rosa in 2001.
They have received "Bib Gourmand" honors from the Michelin Guide and been featured in Gourmet, Food + Wine, Bon Appetit and Wine Spectator, among other publications. Together, they were crowned “King & Queen of Porc” at the Grand Cochon at Aspen Food & Wine 2011.
Dave the Butcher is a longtime educator and customer favorite at Marina Meats, a San Francisco purveyor of organic, grass-fed meats, who has appeared at Eat Real Fest in Oakland and other events.
Tickets are $60 each, including dinner; wine will be offered by glass or bottle. The event takes place in the showcase kitchen at The Key Room, 1385 N. Hamilton Parkway, in Novato. Reservations are available online at bit.ly/FSchefevents or by calling 415-382-3363 x243.
